WHere is a home-style version of a drink from a new drinks list. It's a party-sized prepared mix which is packed with the essence associated with holiday season, making it excellent for hosting a holiday party. Any leftover syrup you can use for morning drinks, puddings, or to make more rounds of bikinis.
Bikini
Makes enough for 10 guests
For the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Citrus Syrup: Place every items in a pot, heat until it reaches a simmer, stirring to dissolve. Then, remove from the heat and leave to cool down entirely. Decant into a sealable bottle, close it keeping it in the fridge, where it will keep for up to four weeks.
For the Cocktail Base: Mix every spirits and syrup in a large bottle, leave to sit for an hour, then filter it , ideally through muslin, so it's completely strained.
To serve: Measure 85ml of your cocktail base into your stirring glass containing ice, and agitate carefully for a minute to cool it down. Pour into an cold coupe glass or similar, top with a few cranberries and complete it using a light spray with the mandarin essence above the glass.
